crunchy toast with marinated anchovies

Crunchy anchovy and avocado toast

Ingredients for 4 people

•    2 avocados
•    2 tomatoes
•    1 tray of  La Sablaise marinated anchovy fillets
•    1 bunch of basil
•    20 slices of toast


•    Chop the avocados in half and remove the stone.
•    Scoop out the flesh with a spoon and place it in a bowl.
•    Open the tray of La Sablaise marinated anchovies and add the equivalent of 5 table spoons of marinade to the avocado and mash it with a fork.
•    Chop the tomatoes into small cubes and add them to the mixture.
•    Mix and season with salt and pepper.
•    Spread on the toast in a generous 3 millimetre layer then place an anchovy on top.
•    Decorate with basil leaves and a drizzle of olive oil.


The marinade will prevent the avocado from blackening. It will also season the avocado perfectly.
